  • shredded cheddar cheese¾ cup
  • large eggs2
  • garlic powder1 tablespoon

Instructions

    Preheat oven to 400°F (200˚C).

    Grease a baking sheet with nonstick spray.

    Grate the zucchini into a bowl and salt generously.

    Allow the zucchini to sit for 20 minutes as the salt draws out moisture.

    Turn the zucchini onto a clean dish towel and wring it out over the sink or into a separate bowl.

    Transfer the zucchini back into the bowl and add the bread crumbs, cheese, eggs, garlic powder, and pepper.

    Mix together until well-combined.

    Roll a tablespoon at a time of the zucchini mixture into tots.

    Place on the prepared baking sheet.

    Bake the tots for 20-25 minutes, or until crispy.
