Ingredients

  • vegan margarine¼ cup
  • soy milk½ cup
  • sunflower oil2 tablespoon
  • plain flour2 cup
  • caster sugar½ cup
  • baking powder1 teaspoon
  • salt½ teaspoon

Instructions

  1. 1

Gently melt the butter over a low-medium heat.

  2. 2

Add milk and 2 tablespoons of sunflower oil and mix together.

  3. 3

Once combined, take off the heat and set aside.

  4. 4

In a separate bowl, combine the flour, half of the sugar, baking powder and salt with a fork.

  5. 5

Make a well in the centre.

  6. 6

Pour the butter mixture into the well.

  7. 7

Combine gradually until a thick dough forms.

  8. 8

Using your hands, roll dough into little flat balls and with your thumb, press a hole in the centre of each doughnut. (You may need to flour your hands for this part to avoid getting sticky!) Heat up the litre of oil in a pan.

  9. 9

To know when it's hot enough, fry a little bit of bread in the oil.

  10. 10

If it goes brown and floats to the top, in 45-50 seconds the oil will be ready!

  11. 11

Gently lay the doughnuts into the oil using a spatula.

  12. 12

Fry for about 3-5 minutes on each side, until golden brown.

  13. 13

Transfer the doughnuts onto some tissue paper to soak up any excess oil.

  14. 14

Then roll into a bowl of the remaining sugar.

  15. 15

    Enjoy!
