Pumpkin Chocolate Chip Whoopie Pies

Preheat oven to 350°F (180°C).

Line two baking sheets with parchment paper.

In a large bowl, whisk together the brown sugar and oil until evenly combined.

Add eggs and pumpkin; mix until combined.

Add flour, baking soda, baking powder, salt, pumpkin pie spice, cinnamon, and mix.

Stir in the chocolate chips.

Use a 1½-ounce ice cream scoop to portion out the batter onto the prepared baking sheets, spacing at least 2 inches apart.

Bake the cakes for 13–15 minutes, until firm to the touch and a toothpick inserted into the center of a cake comes out clean.

Remove from the oven and let cool completely.

Make the filling: Add the cream cheese and butter to a mixing bowl.

Whip until smooth.

Mix in powdered sugar and vanilla extract.

Spread the filling onto half of the cooled cookies.

Place the remaining cakes on top of the filling, domed sides up, and press down lightly to adhere.
