Ingredients

  • flour9¼ oz
  • wholemeal flour9¼ oz
  • salt1 teaspoon
  • baking soda1 teaspoon
  • buttermilk2 cups
  • egg1

Instructions

  1. 1

Combine both types of flour with baking soda and salt in a large bowl.

  2. 2

Add the buttermilk and using a wooden spoon mix until you get nice dough.

  3. 3

Transfer onto a floured surface and form into a loaf (do not knead, the less you work the dough the better).

  4. 4

Using both hands make moves like if you wanted to lift the dough, then tuck it under and at the same time turn it in clockwise/anticlockwise direction.

  5. 5

    Repeat several times.

  6. 6

This will shape the dough into a nice round loaf.

  7. 7

Place the dough onto a baking tray lined with baking paper and mark a cross using a knife (you can also cut it into quarters, if you prefer smaller loaves).

  8. 8

Brush with egg wash and place in a preheated oven.

  9. 9

Bake at 200 C/400 F for 30 minutes or until ready (if you knock on the bottom of the bread and you hear a hollow sound you know its ready).

  10. 10

Let it cool down on a wire rack before serving.
