Lemon Chicken And Asparagus Stir-Fry

Ingredients

  • olive oil½ tablespoon
  • boneless, skinless chicken breasts2
  • kosher salt1 teaspoon
  • freshly ground black pepper½ teaspoon
  • minced garlic1 tablespoon
  • asparagus3½ oz
  • lemon½
  • lemon½
  • soy sauce3 tablespoon
  • cooked rice0

Instructions

    Season the chicken with the salt and pepper.

    Heat the olive oil in a large pan over medium-high heat.

    Add the chicken and stir-fry until no longer pink on the outside, about 4 minutes.

    Add the garlic and continue cooking until the chicken is cooked through, about 4 minutes more.

    Add the asparagus, lemon zest, and lemon juice and toss to combine.

    Cook until the asparagus is tender, about 2 minutes, then stir in the soy sauce.
