Ingredients

  • Kidney Beans1/2 bag
  • Coconut Milk1 Can
  • Onion1 Diced
  • Scotch Bonnet3
  • Black Pepper1 tablespoon
  • Salt1/2 tbs

Instructions

  1. 1

    Cook beans until tender, add rice, coconut milk, onion, black pepper and salt, and add enough water to just cover the ingredients.

    Place Scotch Bonnet peppers on top, careful not to burst them.

  3. 3

    Simmer until rice is tender.

  4. 4

    Remove pepper before serving.
