Sort of German Potato Salad

Ingredients
- 8 To 9 medium
- 1 Green pepper -- chopped
- 1 md Onion -- chopped
- 3 To 4
- (reserve one to slice as
- Garnish)
- 6 sl Bacon
- 3 tb Bacon fat
- 3 tb Vinegar
- 2 tb Sugar
- Salt and pepper -- to taste
- 1/2 c Salad dressing or light
- Salad dressing
- Boiling potatoes
- Hard-boiled eggs -- chopped
Instructions

Peel, quarter and cook potatoes in boiling salted water.

Meanwhile, in serving bowl place chopped green pepper, onion and chopped eggs.

Fry bacon until crisp.

Drain on paper towel.

Crumble.

To 3 T.

of bacon fat in pan, add vinegar, sugar, salt and pepper.

Boil just before serving.

To bowl, add sliced potatoes.

Pour on cooked dressing.

Add about 1/2 cup salad dressing or mayonnaise to make creamy.

Top with bacon and egg slices.
