Sesame Peanut Noodles

Ingredients
- peanut butter4¼ oz
- low-sodium soy sauce3 tablespoon
- sesame oil2 tablespoon
- rice vinegar2 tablespoon
- water3 tablespoon
- brown sugar2 ½ teaspoon
- garlic1 clove
- minced fresh ginger½ tablespoon
- dried spaghetti noodles8½ oz
- shredded carrots2 oz
- shredded red cabbage1¾ oz
- shelled edamame4 oz
- chopped peanuts0
- black sesame seeds1 tablespoon
- thinly sliced scallions0
Instructions

In a blender, combine the peanut butter, soy sauce, sesame oil, rice vinegar, water, brown sugar, garlic, and ginger and blend until smooth.

In a large bowl, combine the spaghetti, carrots, cabbage, and edamame, then pour over the peanut sauce.

Use tongs to toss well until the sauce is fully incorporated.

Divide the noodles between serving bowls and garnish with peanuts, black sesame seeds, and scallions.
