  • shiitake mushroom1 pound
  • unsalted butter2 tablespoon
  • garlic2 clove
  • finely chopped fresh thyme leaves1 teaspoon
  • kosher salt0
  • freshly ground black pepper0
  • arborio rice1 ½ cup
  • white wine½ cup
  • grated parmesan cheese1 cup
  • fresh parsley¼ cup

Instructions

  1. 1

Add the stock to a medium pot and bring to a boil over high heat.

  2. 2

Once the stock is boiling, reduce the heat to low or remove the pan from the heat and keep nearby.

  3. 3

Heat the olive oil in a wide, tall pot over medium heat.

  4. 4

Once the oil begins to shimmer, add the shallot and cook, stirring frequently, until translucent.

  5. 5

Add the shiitake mushrooms and butter.

  6. 6

Cook, stirring occasionally, until the mushrooms have cooked down and browned.

  7. 7

Add the garlic, thyme, salt, and pepper, stir, and cook for 1 minute, until the garlic is fragrant.

  8. 8

Add the rice and stir until fully coated in the mushroom mixture.

  9. 9

Let the rice toast for 1-2 minutes, until aromatic.

  10. 10

Add the white wine and cook until evaporated, stirring occasionally.

  11. 11

Add 1 cup (240 ml) of the hot stock and stir to combine.

  12. 12

Cook, stirring frequently, until the stock is fully absorbed by the rice.

  13. 13

Continue to add the stock, ½ cup (120 ml) at a time, stirring continuously, until fully absorbed, 15-20 minutes.

  14. 14

Depending on how fast the rice cooks, there may be leftover stock.

  15. 15

Once the rice is al dente, remove from the heat.

  16. 16

Add the Parmesan and stir to combine.

  17. 17

Garnish the risotto with parsley, Parmesan, salt, and pepper.

  18. 18
