One-Pot Pad Thai

Ingredients

  • pad Thai noodles8¾ oz
  • sesame oil2 tablespoon
  • large eggs2
  • chicken breast1
  • diced shallots1 oz
  • pad thai sauce12 tbsp
  • bean sprout3½ oz
  • crushed peanuts2¼ oz
  • chopped green onions1 oz
  • chopped fresh cilantro¼ oz

Instructions

    Cook the noodles according to the package instructions.

    Drain and toss with 1 tablespoon of sesame oil, then set aside.

    Add ½ teaspoon of the sesame oil to a large pot over medium-low heat.

    Pour in the eggs and scramble until set, then remove from the pot.

    Add the remaining ½ tablespoon of sesame oil to the pot over medium heat, then add the diced chicken breast.

    Cook until no longer pink in the middle, then set aside.

    Add the shallots to the pot and cook until lightly browned and fragrant.

    Then, add the noodles, eggs, and chicken back to the pot.

    Pour in the pad Thai sauce and toss to coat.

    Add the bean sprouts, crushed peanuts, green onions, and cilantro, and mix until well combined.

    Divide between serving plates and garnish with more peanuts, green onions, and cilantro.
